Gluten Free Shrimp Dumplings with Rice Paper
Had we known that making dumplings is this easy.... just WOW! All you have to do to make this delicious rice paper dumplings is to put everything in a food processor, blend, season and put this filling into rice papers, roll them up, steam for 5 minutes and just like that it's ready to serve! Did I get it all in one sentence? This recipe makes about 8-10 dumplings and 3 large ones were filling enough as a one-person meal as it's protein packed with pressed tofu and shrimp. You're welcome to enjoy this with some hot sauce or other sauces of your choice but I highly recommend the soy vinaigrette I made here to accompany this shrimp dumpling! I'm freezing some from this batch, so I'll let you know how that goes!
