Grilled Salsa Verde Molcajeteada
A good salsa must have spicy peppers, any tomato for acidity, and garlic and onion for flavor, seasoned with salt and maybe, black pepper if you like. Avocado and cilantro would be extra for more flavor or consistency, as well as any other ingredients. Tatemada means charred, and molcajeteada means it was crushed in the molcajete, so to make a salsa molcajeteada you can roast, broil, steam, or fry your peppers and vegetables as long as it's crushed in the molcajete, and to make a salsa tatemada can even be blended as long as the peppers and vegetables are charred.
