A classic lentil bolognese. A must in a vegan's recipe repertoire, in my opinion! The combination of the salt, acid (vinegar) and sugar really makes it delicious. I could drink this! Walnuts are added as part of the meat sub along with the lentils, and they really add a nice texture. Cost: $9.75. Note: The measurements here are intended for meal prep. This will last a week for my partner and I. Pictured with Chickpea Fajita Filling (meal prepped!), and white rice.
