This is my adapted ultimate sponge recipe, infused with fresh lemon zest. It makes the perfect base for a flavoured layer cake and is ideal for decorating as a celebration cake. I usually pair it with homemade lemon curd and vanilla Swiss meringue buttercream...a winning combo!
