If you’ve never had tempeh before, don’t stress! Up until 3 years ago I’d never had it myself and it honestly freaked me out a little. It looks strange but it’s honestly really delicious! It has a really delicious nutty-ness to it and a satisfying texture. I love that it’s a complete protein and that it’s a convenient source of protein that lasts in the fridge for a while before going bad! This meal is perfect for meal prep as well!
Ingredients
2 medium sweet potatoes, washed throughly & diced
1 packet of tempeh, chopped (substitute for chicken if you’d like)
1 bunch of broccolini
