This tart is a gentle twist on the classic lemon custard tart and is inspired by Heston Blumenthal's recipe. The filling is infused with Earl Grey tea, carrying a faint note of bergamot. It is not dominant but works quietly in the background, making the tart feel more refined and layered. Once chilled, the Earl Grey flavour becomes even more subtle, yet it still marks the tart as something different and more complex. Difficulty – Intermediate
