These short rib empanadas were the best seller at my job. The chipotle de leche was something my head chef introduced me to and I’ve been hooked on it ever since. I have used it on a few dishes ( even the shrimp tacos I have posted here) if you love sweet and spicy with a bit of smoky flavor, you have to try it. The pineapple salsa gives such a good balance with this dishes ( I also posted the pineapple salsa recipe here too). You can also use my homemade empanada dough and my abuela’s short rib recipes I posted here.
