I love creating buddha bowls...I think this should really be called the vehicle for the peanut sauce!! For me, simple organic diced chicken and broccoli cannot be beat. I didn't have carrots and cabbage when I made this but they add vibrancy and nutrients. You can substitute shrimp or tofu for the chicken and add any other veggies you have on hand. I often will add minced ginger if I have fresh ginger on hand.
Ingredients
1 lb. โ 1 1/2 of chicken breast,
1 cup of dry rice or a box of rice noodles (your preference on type of rice or rice noodles, I use both basmati rice and Pad Thai noodles )
1 cup of julienned carrots (carrots cut into strips)
