Se enriquece con zanahoria, arvejitas y el inconfundible perfume de la hierbabuena. El toque final y característico que le da el apelativo "a la italiana" es la incorporación de papas fritas doradas y una generosa cantidad de queso parmesano rallado, que se funde en el guiso caliente. Se sirve tradicionalmente con arroz blanco. [The Mondonguito a la Italiana is an emblematic and beloved stew from the popular Peruvian cuisine. Despite its name, its soul is 100% Creole. It consists of beef tripe (callos) slowly cooked until very tender, cut into strips and stewed in a tasty dressing based on onion, garlic, tomato and Peruvian peppers. It is enriched with carrot, peas and the unmistakable scent of spearmint. The final and characteristic touch that gives it the "a la Italiana" name is the addition of golden fried potatoes and a generous amount of grated Parmesan cheese, which melts in the hot stew.
