Classic Apple Tarte Tatin with Vanilla Tonka Ice Cream
A refined take on the iconic Tarte Tatin, this version focuses on clarity of flavour and clean execution. Firm apples are carefully cooked to remove excess moisture before being set in a deep amber caramel, then baked beneath golden puff pastry. Served with a smooth vanilla–tonka cream ice cream, the dessert delivers warmth, freshness, and aromatic complexity in equal measure. In this recipe, small individual oven-proof pots are used, but similarly sized aluminium or baking tins work just as well. Whichever you choose, ensure there is sufficient depth for eversting to fit in and to prevent the caramel from overflowing during baking.
