Crispy Fish Burger with Chorizo Mayo and Goat Cheese
This seafood burger brings together crisp, golden fish, smoky chorizo mayo, and a touch of creamy goat cheese for balance. Fresh salad leaves and pickled red onions add brightness and texture, making each bite savoury yet refreshing. The recipe was originally developed with salmon, but testing showed that trout gives a cleaner, lighter flavour that better complements the chorizo and cheese. Either fish works well — choose based on your preference. Avocado can be added for extra richness, though I personally prefer the burger without it for a lighter, more balanced result.
