This is a small, individual, and easy way to make Trompo, which is very similar to al pastor meat but is cooked in a big stick with fire like the shawarma meat. It's very popular in many regions of Mexico for tacos and many other ways to eat it. This can be served on a plate with any side, but the best is in a taco with onion and cilantro, a squish of lime, and pineapple habanero salsa!
Ingredients
1.5 lb of pork shoulder (thin sliced and small pieces)
110 g of Achiote paste.
0.5 big onion cut into pieces
