Many Indian sweets are heavy with cream. ghee, and sugar. Kheer is an exception, a mildly flavored dessert that highlights the cardamom. I make mine even lighter than most versions, using 2% milk and taking advantage of the natural sweetness of golden raisins to cut back on the amount of sugar.
