Mayi moulin is a traditional Haitian dish is very very loved, it is similar to grits and polenta. This dish take a bit of time to cook but it is VERY easy to and delicious so it is worth all the time, a pressure cooker is something that i find very useful when comes to making traditional Haitian food, it saves so much time. I personally prefer to cook with dried beans instead of canned so to save time i use a pressure cooker and my dried beans are cooked in 15 minutes! Be sure to eat it with a well ripened avocado, it is best paired with fish such as red snapper or salmon. It is an unwritten rule to eat it with fish, i have never seen it paired with any other protein. I surely hope you give this dish a try and i believe you will love it. I highly suggest going to the asian market for some of the products like the creamed coconut, and the dried shrimp skin if you cannot find them at the local store. African and Caribbean stores are the first places to check for most of the ingredients.
