This modern Béarnaise sauce is a fantastic condiment that pairs incredibly well with steak. It is rich and decadent, yet also light due to the aeration from an Espuma gun. That being said, if you don't have an espuma gun, you can serve it in the traditional/classic manner. If desired, and in keeping with tradition, you can infuse your reduction with shallots, pepper, and tarragon leaves before straining and discarding the solids for the final Béarnaise sauce. I have not included this step here; I prefer the clean Béarnaise flavour alongside the tarragon oil. Difficulty - Medium
