Cream of Wild Mushroom soup is a hearty soup that is good virtually anytime of year. Its like a hug in a bowl. It’s a pretty forgiving soup, in that you can use whatever mushrooms you have on hand. My preference is to go for super depth of flavor and use a variety of different mushrooms., portobello, shiitake, cremini, etc. The result is a creamy, velvety smooth restaurant quality soup with a wonderful depth of flavor.
