My adaptation of this unique dish. after living in London for a number of years and a frequent visitor to China Town where Pekin Ducks were in almost every window I tried to create a dish that reminded me of these days, also a recipe to make the pancake wraps.

Ingredients

1 Large Barbary duck fresh or frozen
18 Pancake wraps you could use small flour tortea’s.
1 bunch Spring Onions shredded into strands soaked in iced water
