We love healthy, filling soups in our family. Red lentils cook the fastest of all the lentil varieties. They pack a punch of nutrients and are a great source of fiber and protein. For this photo, I substituted diced tomatoes as I didn't have tomato paste on hand. It had no impact on the taste or consistency. Also, I encourage you to use most savory recipes as guides and trust your intuition with substitutions and additions.
