Ramen is the perfect winter dish. It’s warming, comforting, and feels like it should take all day to make—but this version is built for real life. This is ramen for a weeknight. Or a lazy night in. The key is the broth. Instead of starting from scratch and letting it simmer for hours, we take a good-quality store-bought chicken broth and build on top of it. Lemongrass, garlic, ginger, scallions, chilies, miso and gochujang are our shortcut– these will add enough to the stock so that you don’t miss the scratch made version. As that simmers quietly in the background, you can knock out the rest: miso-glazed chicken thighs, which roast alongside oyster mushrooms, broccolini, and sweet Campari tomatoes, which burst in your mouth and add little pockets of umami juiciness to the experience. Perfect for a cold night, a low-effort dinner that still impresses, or just when you want something warm that satisfies. You can even make extra broth and defrost for another night in the future.
