enfrijoladas
This dish is so diverse and made differently all over Mexico. Enfijoladas are just like enchiladas but with beans; some people make the sauce only with beans and spices, and others make them spicy. It can also be stuffed with shredded chicken or beef, but enfrijoladas need "frijoles," which means beans in Spanish.
