Lasagna Soup with Chorizo Chipotle and Ancho Chili
Lasagna soup with a twist! A follow-up to my first rendition, also available here on Provecho, substituting classic Italian flavors for Spanish & Mexican ingredients. It starts with ground chorizo, a spiced Spanish pork sausage. As it browns, oil is released, perfect for sautéing onion & poblano while infusing flavor. We add in tomatoes, broth, oregano & chipotle pepper flakes to create the "soup." A whole ancho chili pepper is thrown in to bolster the flavor. Lasagna noodles are cooked directly in this flavorful liquid –– making it a simple one-pot meal. To finish, the crispy chorizo bits, cotija & oaxaca cheese are added in. After a couple of minutes at a low simmer, you have a cozy, ooey-gooey pot of spice & warmth awaiting you to dig in.
