I’ve been eating this at least twice almost every single week of my entire life. I’m not kidding when I say every single day I crave tokhme morgh gojeh. The exact translation is “egg tomato”, and that’s all this dish really is. It’s the marriage of tomatoes and eggs–the tomatoes are the only ingredient responsible for the flavor, since they bring the sweet, acid, and umami. The egg brings the sustenance. All you need is some bread on the side, but if you want to do it like a true Persian, I love it with some raw onion, radishes, and tarragon on the side. This takes 15 minutes to make and once you eat it, it’ll be a part of your breakfast rotation forever. Don’t believe me? Try it and you shall see.
