This cake is an Italian favorite and naturally gluten free. My Nana didn’t have access to almond flour when she made this cake. She would lightly roast the almonds and then put them in a blender to process as finely as possible. Now, with access to almond flour that is finely ground, this cake takes on a heavenly lightness my grandmother was trying to achieve her whole life!
