Who else is excited for all the food over Easter? Hot cross buns, Easter eggs, lamb roast dinner! And of course lot's of quality time spent with family. I love these mini egg cookies and they taste just as good as those with gluten in! That's my whole goal with free from baking, to bake treats that taste just as good as the 'normal' alternatives! Why should we have to suffer with poor substitutions when such a large percentage of the population has to eat free from foods these days?! I wish the supermarkets stocked more good quality alternatives because it really isn't that different to bake free from foods with just a bit of knowledge and not a lot of skill!
