One of my favorite things to throw on a salad is a good breadcrumb topping. Maybe spruce it up with some garlic, lemon zest, and herbs. My love for this crunchy goodness fueled the inspiration for this salad. See, one of my favorite things to do with chicken skin is to chip-ify it. One of the greatest flavoral (I don't even think that's a word) and textural bombs to exist. Now combine these two ideas. Throw in some toasted peanut and coconut and we get with this chicken skin topping that'll keep you going for the next bite.
