The Canary Islands, hundreds of miles from Spain near the northwest coast of Africa, has its own cuisine, influenced by its tropical climate and location near Africa. When Spain colonized the islands, it also brought over New World foods from its trade routes, including potatoes. This dish is a classic of Canary Island cuisine, served as a starter or a side to most foods. These potatoes were traditionally boiled in sea water. This stovetop version uses a large amount of salt to replicate that taste. Don't worry; the potatoes do not absorb the salt, due the barrier of the potato skin, but instead will taste of the sea, with a creamy interior.
