Un clásico en nuestra gastronomía, en mi humilde opinión el secreto para hacer una buena salsa al olivo es usar las aceitunas de la mejor calidad posible y también hacer tu mayonesa casera. Hay que maximizar el producto no descartes la cabeza del pulpo, el sabor es el mismo y en este caso la usamos para hacer una chalaca, quedo increíble.
