
Mirza Ghasemi
I’ve been receiving countless messages and comments on my videos requesting to make this dish. If there’s one thing to know, it’s that Persians do not skip the dip. Mirza Ghasemi is a smokey eggplant-garlic-tomato dip and it is absolutely delicious. While I do believe everything happens exactly as it should at the perfect time, it’s tough to not be upset that I haven’t had it sooner. If you make this, you’ll feel the same way. Mirza Ghasemi is best eaten in a mini sandwich (aka “loghmeh”) with some Sangak or Barbari bread (or something nice and crusty), raw onion, tarragon, and radish. Together they form the perfect bite.
