French Onion Soup
This is a basic French onion soup with rich beef stock, caramelized onions, and melted Gruyere cheese. I added a splash of cognac to deep that flavor just a little bit. The thyme and sage help you lean into that cozy Fall feeling. Those bites with the cheese, soup, and bread...sheesh man. The beef stock takes a long time, I cannot lie. Mine simmered for about 9 hours, but could have gone longer. You need that time to extract all fo the collagen and goodies, but it will be worth it. If you find yourself with a day full of nothing, make some beef stock. Then you'll be ready to make this any night of the week. The onions also take quite awhile. So the more patient you are, the deeper the flavor. Be patient, please!
