Asparagus and Pea Spinach Salad
Perfect for my Easter Series 🐰 It takes advantage of Spring produce and brings something bright and fresh to the table. PLUS it's insanely quick to throw together. The asparagus and peas get blanched to soften them and bring out their color, but that's what takes the longest (and it's 3 minutes...) Anddd while that's boiling you can make the dressing so realistically, you could get this together in 10-20 minutes. The feta gives it the perfect amount of creaminess without weighing anything down. The pistachios give crunch, saltiness, and of course extra fat. It just might be my new hyper-fixation salad.
