This is a light, creamy no-bake white chocolate cheesecake set on a ginger biscuit base. It’s served with a chilled vanilla caramelised apple sauce, vanilla ice cream or white-chocolate ice cream (see the ice-cream section for inspiration, or use a good store-bought option), and a touch of salted caramel. It’s decadent yet airy, winter-appropriate, simple to make, and beautiful to plate. Difficulty – Medium
