This sundried tomato and za’atar focaccia is my go to when I want homemade bread without the effort. The dough comes together in one bowl, needs no kneading and relies on time rather than technique. It bakes up soft and airy with golden edges and plenty of olive oil. It’s calm to make, hard to mess up and even harder not to eat straight from the tray. Perfect as a side, for sandwiches or just torn apart while it’s still warm.
