Another variation of one of my "Garbage Bowls" that ended up being too good not to repeat. If you are in a pinch, you can use boneless/skinless filets, but I don't think they taste quite the same - the texture doesn't hold up as well as with the skin on, in my opinion. Plus, the cooked skin makes a great treat for your dog, if you don't eat it (my husband loves it, but it's not really my thing)
