El estofado de pollo fue uno de las primeras recetas que aprendí a cocinar, tenía 8 años cuando por fin mi mamá me enseñó su receta, la recuerdo como si fuera ayer y si bien es cierto esta versión no es exactamente igual, el sentimiento es el mismo. Para esta receta me aventure a combinar las hierbas de mi huerto, sin expectativas empece a cocinar y debo confesar que esta version de estofado supero la version tradicional, algo magico debe pasar al licuar todas las hierbas, sumado a la cerveza y aderezo criollo, mientras avanzaba en la preparacion olores se pachamanca y seco a la nortena iban y venian. Espero que te animes a intentar este estofado verde y si no tienes todas las hierbas has tu propia mezcla, quizas culantro, chincho y perejil ? en vez de cerveza quizas chicha de jora ?, sigamos explorando sabores nuevos. Algunos de ellos viviran para siempre. For this recipe, I ventured to combine the herbs from my garden, without expectations I started cooking and I must confess that this version of stew surpassed the traditional version, something magical must happen when blending all the herbs, added to the beer and Creole dressing, as I advanced in the preparation smells of pachamanca and northern dry came and went.
