Sometimes cooking is about trying new techniques and recipes. I've made jerk chicken countless times, but never jerk rabbit. I first tried jerk rabbit at the Ultimate Jerk Centre in St. Ann, Jamaica - despite its very lean taste I really enjoyed it. So here's my version..
