This combination works beautifully. The dark chocolate mousse is rich and decadent, while the olive oil ice cream is smooth, light, and gently fruity. Together, the ice cream cuts through the richness of the chocolate and adds a fresher, creamy contrast with a subtle olive oil finish. A caramel tuile is included below, though we found it slightly too crunchy for this dessert. It remains there as an optional element if you’d like to experiment. Alternatively, a small pinch of flaky salt and a very light drizzle of good olive oil over the mousse and ice cream could be a simple finishing touch. I haven’t tested this variation yet, but I’d be interested to hear how it works if you try it. Difficulty: Intermediate & Technical
