The Croque Madame is better than the Croque Monsieur because you get that lovely egg yolk centre that adds an extra sauce to the sandwich. Problem is the yolk is only in 1-2 bites of the sandwich! So using Spring Creek Quail Eggs I was able to improve the sandwich adding little bites of yolk all throughout the sandwich.
