One of my favorite dishes is Yoshinoya's beef bowl. It never occurred to me that I could recreate an even better version using mushrooms. I decided to replace all the ingredients with healthier alternatives. Since I created this dish, I've been refining and enjoying it every day. I even started making my own 24 oz. bottle of sauce, so now I only need to dice the fresh ingredients and cook the quinoa, onions, and mushrooms whenever it's time for a restock.
Ingredients
2 cups quinoa, cooked
24 oz. mushrooms, sliced
2 T coconut sugar
