Samosa and White Bean Curry Soup
So it seems I love soups even in the summer this year, I’m not sure why, because it’s been the hottest summer I can remember in a while. But the soups I’ve been making have been light, not too heavy, so it doesn’t feel like a soup you typically have in Autumn/Winter. This one was packed full of so much flavour with all the spices coming through. I added white beans as a chunky bit of protein, cooked down in garlic and red onion and topped with crispy flavourful samosa’s. It was really bloody good!
