Asado de puerco or Asado de boda is a traditional pork stew like dish served all over Mexico but is more common in the Northern states. It can be served in a bowl or a plate with beans or in a burrito. Asado recipes can vary wildly from state to state, city to city and even family to family, but the base ingredients tend to be pretty fixed.
