I’ve been seeing blended cottage cheese sauces all over for a while now, and after making a bunch of versions myself, this is easily my favorite. If you like those indulgent, creamy pasta dishes but still want to keep things macro-friendly, this one is kind of ridiculous. It’s meant to mimic something like rigatoni alla vodka with stracciatella, but made in a way that you could realistically eat on a weeknight or even meal prep for the week. It genuinely doesn’t feel like a “healthy” version of anything, which is why I keep coming back to it. I’ve eaten this multiple times in a day without getting tired of it, and it holds up insanely well in the fridge for a few days or even in the freezer if you want to stretch it out longer. Just make sure you let everything cool slightly before mixing in the cottage cheese sauce so it stays smooth and creamy.
