citrus-orange-mousse-cake
I wasn’t initially a fan of this flavour combination, but this cake completely changed my mind. It might just be my new favourite of all the cakes I’ve made. Each layer is beautifully balanced, with rich, dark chocolate elements complemented by a bright, refreshing orange citrus compote. Every bite is a real delight, as the flavours blend perfectly together. If you love dark chocolate, a mousse-like texture, and a hint of citrus, this cake is for you! This recipe requires fresh oranges. I recommend purchasing 4-6 oranges, depending on their size. Keep in mind that you’ll need enough for candied zest, fresh orange juice, and orange segments. This recipe is designed to fit perfectly into a 22 cm x 4.5 cm heart-shaped tart ring, though adjustments can be made if necessary. Keep in mind that chocolate curls, flowers, or additional decorations are optional and purely for visual appeal. They are not included here, as they do not impact the flavour of the cake. That said, this recipe will yield extra gel and citrus peels for "start-pack" garnishes. Please, make sure you have all the required tools and equipment ready before beginning this recipe. This tart requires overnight freezing, and while there are several components to prepare, each is relatively straightforward. You can also spread out the preparation over a few days if that suits your schedule. Difficulty - Medium/technical
