Nalysnyky Ukrainian Rolled Crepes
In just about every country around the world, there is a dish that involves crepes in some way. In the Ukraine, crepes are traditionally made with either wheat flour (for sweet fillings) or buckwheat flour (for savory fillings) and follow a traditional crepe batter recipe. For this recipe, we are using Tipo 00 flour. You can use AP flour also. Traditionally, this is served with a cottage cheese filling that includes cream, butter and other ingredients. These can be finished off in the oven or pan-fried in butter. For our recipe, we went with mushrooms and onions as our savory element. This is a two-part recipe. This will make 4-6 large or 7-10 small crepes, depending on the size of the pan you use.
