Bruschetta Steak Sandwich
Bruschetta is one of my all-time favorite bites. Simple, yet it hits every note — juicy, sweet, and acidic tomatoes piled onto charred, toasty bread. But I started thinking: what if we took those same flavors and expanded them into a full-on steak sandwich? I was out in the Hamptons with my niece, Lilah, when I spotted some gorgeous tomatoes at the farmers market. She’s a steak lover, so the idea clicked right away: bruschetta steak sandwich. With all that extra real estate on the grill, I threw on zucchini and onions too — they picked up just enough char and added a smoky sweetness to balance out the tomatoes. To bring it all together, I whipped up a parsley–lemon zest mayo that gave the whole thing a bright, creamy finish. The result? Easily one of the best steak sandwiches I’ve ever had.
