This tenderloin is a testimony as to the magical relationship between meat and sweet. The dish is really easy and impresses everyone at the table. It pairs so well with new potatoes and almost anything green.

Ingredients

2 lb. pork tenderloin
1 cup of fig preserves (preferably with whole figs but regular preserves will do). NOTE: I use Braswell's Fig Preserves, found in many grocery stores and online.
1 cup of By Design Fig Vinegar. NOTE: I have tasted every fig vinegar I have ever found. The flavors are very different, I would ALWAYS choose ours.
