This is a very quick and easy vodka sauce. Not reinventing the wheel here, but I love it. The tomatoes make all the difference. My go-to are Bianco Di Napoli. If you're going to bake it, I recommend reducing the total cook time to about 5 minutes. You want it under-done so you aren't essentially cooking it twice.

Ingredients

1 tbsp olive oil
1 shallot
3 garlic cloves
