This recipe is inspired by my mother-in-law, Betty Roberts… Momma Roberts to me and Granny to our boys. Momma Roberts didn’t let a lot of folks into her kitchen, but I was honored to be one of the few to be welcomed in to observe and learn. This sweet potato casserole is perfect for holiday gatherings or a cozy family dinner. Creamy mashed sweet potatoes are blended with warm spices, butter, and a hint of vanilla, creating a rich and flavorful base. The casserole is then topped with a crunchy, caramelized pecan topping made from brown sugar, butter, and chopped pecans, adding a delightful contrast in texture and sweetness. In a word, delicious!
