27. Chickpea "omelet"
I hesitate to use the word "omelet" because that expectation will set you up for disappointment, but that's what most people call this dish. If you want an omelet, you better go make an omelet, 'cause this isn't it, friend. This recipe eats more like a savory breakfast pancake. It has a thick and hearty texture.
