These are easy to make in a food processor. The trick is to make them early and let them sit in the fridge for a good while, the day before if possible. That makes them easy to pan fry without falling apart. These are really tasty with a remoulade sauce. They make good sandwiches, too.

2 c. black eyed peas, rinsed and drained
0.5 c cornmeal
0.25 c minced onion
