Tofu and Broccoli (cantonese Style)
A vegan take on the traditional beef and broccoli. We use baking soda to tenderize the tofu the same way that Cantonese recipes tenderize beef. It adds a nice flavour to the tofu and allows the skin to crinkle up, kind of like a beef. Costs about $18.80 (broccoli is expensive!) and lasts my partner and I one work week of lunches and dinners, mixed with the other dishes we meal prepped. This makes a lot! Make sure you have 2 pans that are big enough to fry everything.
